For a long time, Gringo's had little competition in Rexburg, so almost everyone knew about the all-you-can-eat chips and salsa and the American-Mexican food served. A couple of years ago, they built a new building which remains clean, comfortable, and consistent.
For those liking mild Mexican, the Colorado Verde burrito offers an excellent meat and sauce combination.
Gringo's offers a full Mexican menu with a few standard American items. They serve non-alcoholic specialty drinks and offer a nice fried ice cream for dessert.
Their chips and salsa offer a great value and the servers will bring you as many salsas as you would like.
Having eaten at Gringo's for more than 15 years, I have a fun insider tip--their rootbeer, with a lemon wedge squeezed in, is the best in the valley.
Gringo's is consistent and offers very reasonable prices with a nice, comfortable setting. They also have adequate size for large parties.
